Simple Blueberry Goat Cheese Dip

An impressive and incredibly easy appetizer to bring out at your next party. Tangy goat cheese and sweet blueberry compote make the perfect pair.

Equipment

  • Hand mixer or stand mixer
  • small pot
  • spatula

Ingredients
  

  • 8 ounces goat cheese logs or spread
  • ¼ cup plain greek yogurt
  • 1 cup fresh blueberries
  • 2 tablespoons water
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh minced rosemary
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon cinnamon

Instructions
 

Make the whipped goat cheese

  • Combine the goat cheese and greek yogurt in the bowl of a stand mixer or a medium-sized mixing bowl.
  • Beat until the mixture is whipped together. Spread the mixture into the bottom of a small plate and set aside.

Make the blueberry compote

  • In a small pot, add the blueberries, maple syrup, lemon juice, lemon zest, cinnamon, and water–stir well. Turn the heat to medium-low and cover.
  • Continue to cook, stirring occasionally, until the blueberries burst and the mixture resembles a thickened syrup. This could take anywhere from 5 to 15 minutes.
  • Remove the blueberry compote from the heat and let cool.

Assemble

  • Once cooled, pour the blueberry compote over the top of the whipped goat cheese. Spread the blueberries on top. Serve immediately or cover with plastic wrap and store in the refrigerator.

Hint: Wait for the blueberry sauce to cool slightly, but it doesn’t have to be completely cold. This dip is  just as amazing warm as it is chilled for a few hours. If you’re serving right away, you can serve warm.
