These oatmeal blender pancakes are made without bananas or flour for a healthy, filling, and delicious breakfast on the table FAST! Try the gluten free and vegan options to make this recipe fit your exact needs.

Ingredients

  • 2 cups oatmeal
  • 1/2 cup plain greek yogurt
  • 1/2 cup unsweetened almond milk (or any dairy or plant milk)
  • 1/4 cup applesauce
  • 1 egg
  • 2 tablespoons maple syrup
  • 1 tablespoon baking powder
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Add all ingredients into a high-powered blender or food processor. Blend until smooth.
  2. Heat a griddle or large non-stick skillet over medium-low heat and spray with oil. Scoop a quarter of a cup of batter onto the pan. The batter will be thicker than the batter of regular pancakes. You can smooth it out some if needed.
  3. Cook for 3-5 minutes or until the bottom side is browned and the top is bubbly and almost set. Flip and cook for an additional couple of minutes. Repeat with the remaining batter.

Notes

Vegan Option - instead of an egg, make a flax egg to use in the pancake mix. Flax eggs are simple and quick to make. You can replace one large egg by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water and letting the mixture sit for 5 minutes before adding it to the pancake batter.

Make it Gluten Free - use certified gluten-free oats to be completely safe for a gluten-free diet.
