Who else has a constant supply of veggie scraps in Who else has a constant supply of veggie scraps in the freezer?🙋🏻‍♀️🙋🏻‍♀️  Don’t waste those peels, then waste $$$ buying boxes broth! It just doesn’t make sense when flavorful nourishing veggie broth can be made from the skins and scraps of your vegetables you use through your the week.  A few veggies I wouldn’t use: broccoli, cabbage, or anything cruciferous that will overwhelm the other flavors.  Once your gallon bag or container is full in the freezer just add the scraps to a stock pot, fill with water, season as you’d like, bring to a boil and simmer for an hour or so- strain and freeze in portions you will need! Easy Vegetarian Lunch filled to the brim with plan Easy Vegetarian Lunch filled to the brim with plants:
-Black Bean Tortilla Chips (love @aldiusa brand)
-Smashed Avocado
-Pinto Beans (canned or homemade)
-Salsa
-Cheese (use vegan cheese or opt out to make this lunch vegan!)
-Sautéed Swiss Chard  - To sauté Swiss chard: roll the Swiss chard leaves a few at a time up like a cigar and slice into ribbons. Heat 2 tsp of oil in a pan, add Swiss chard and sea salt and sauté for 3-5 minutes until wilted.  - Assemble nachos on a baking sheet and bake for 5 minutes at 350 OR microwave for 30-45 seconds until cheese is melted.  I count 5 🖐different types of plants in this meal! White rice has the nutrient-filled germ and bran removed, so yes it’s a plant,but no its not the most nutritious option you could select.  Instead of white rice, add brown rice, farro, quinoa, buckwheat, or litterally ANY other whole grain to your dish.  Brown rice is an even stevens exchange- use it anywhere white rice is used.  For a soup or something that might get "soggy" on you, try farro or wild rice, the dense grains hold up well to moisture.  Not ready to skip the white rice? Have I told you how much I love pizza? And how ea Have I told you how much I love pizza?  And how easy pizza night makes it to get a dinner on the table that everyone loves💁🏻‍♀️!  Naan (I learned we don’t need to say “naan bread” because it just means “bread bread”😅) makes this 100 times easier, since it’s ready to go for toppings.
