Cucumber Strawberry Salad

Ingredients

  • 1 1/4 cup strawberries diced (1/2 inch pieces)
  • 1 1/4 cup cucumbers diced (1/2 inch pieces)
  • 1/3 cup loosely packed basil leaves thinly sliced
  • 1/4 cup red onion thinly sliced and diced (about 1/4 of a medium onion)
  • 1 tablespoon white balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon olive oil
  • pepper to taste

Instructions

  • Whisk the vinegar, honey, olive oil, and pepper together in a small bowl, set aside.
  • Dice the strawberries and cucumbers and slice the onion and basil. Add them all of a medium sized bowl and toss together. Pour the honey balsamic mixture over top and mix well.
  • If adding the feta, gently fold into the salad. Optional to serve on the side.
