Plant based breakfast of “running out of time” champions.
Seriously.. no matter how early I get up, we’re still racing to get a meal down and get out the door on time😜.
DEATs: 1/2 baked sweet potato (prep those ahead of time y’all)- slathered in PB and chia/sesame seeds sprinkled with a heavy hand. -pineapple and strawberries topped with coconut yogurt (frozen optional if you sit it too close to the ice maker like I happened to😂) topped with shredded coconut
I don’t usually count or share nutritional- but plant based eating brings ON the nutrition.. including protein: 💪Protein: 15g 👌Fiber: 13g
