Toast may be a typical, running-out-the-door breakfast, but it does not have to be boring.  In fact,  it can be incredibly tasty and satisfying! I’m a sucker for a sweet and savory breakfast, so I love making one slice of my avocado cottage cheese toast AND a slice of this ricotta and honey toast, topped with fresh berries and crushed pistachios or walnuts! 

I used to only use ricotta cheese for lasagna, but years ago I discovered how tasty it is with a warm, toasty slice of bread and a heavy drizzle of honey on top. The sweet, creamy, and crunchy combination is everything you want in a breakfast toast. 

I usually eat this one for breakfast, but it would also make for a quick and easy snack, or you could serve it on top of small slices of crostini for a pretty ricotta toast appetizer! 

And while this ricotta toast with honey and strawberries is incredibly satisfying, it’s not quite enough for a full breakfast. I like to eat it alongside hard-boiled eggs and turkey sausage for a full, balanced breakfast.

  • Ricotta cheese: Adds a creamy texture and boost of fat and protein for extra satisfaction. Use either whole milk or part-skim. 
  • Honey: Yes, honey is still an added sugar, even though it comes from a natural source. But, just a touch adds the best flavor and sweetness to this recipe– you don’t have to avoid ALL added sugars! 
  • Optional ricotta toast toppings: Walnuts, pistachios, almonds, pecans,  fresh sliced strawberries, or a sprinkle of raspberries, blackberries, or blueberries. 

How to make toast with ricotta and honey

It doesn’t get much simpler than this. Just toast your bread, spread ricotta on top, and add your toppings! Honey, nuts, cinnamon, berries, seeds.. the options are endless!

Other ricotta toast ideas 

  • Savory ricotta toast: Swap honey and fruit for cherry tomatoes, fresh basil, and a drizzle of extra virgin olive oil.
  • Ricotta toast with egg: For a protein-rich savory toast, add scrambled or poached egg on top of ricotta. 
  • Sweet ricotta toast:  Mix ¼ teaspoon of vanilla extract and a teaspoon of honey into the ricotta for a dessert-like sweet ricotta spread. 
  • Whipped ricotta toast: While ricotta cheese is pretty creamy already, whip it in a food processor for 30 seconds to give it a luxuriously smooth and airy texture. 
  • Lemon and herb: Mix lemon juice and fresh herbs like parsley, thyme, or basil into the ricotta cheese for a savory, creamy base layer.
